A sublime selection of food for a special New Year party

 

Starter

Classic cold-smoked salmon, cornichon, shallot and capers 

Seared wood pigeon, cauliflower puree, roasted cauliflower, red wine glaze, buttered walnuts

Smoked ham hock and pork terrine, chicory and mustard dressing

Smoked venison, soused winter vegetables, watercress, port reduction

Roast butternut tart with caramelised onion

Our own hot-smoked salmon, cauliflower fritters, seasonal leaves with lemon dressing

Caramelised red onion, goats' cheese and thyme tart, rocket salad with balsamic dressing

Pancetta, rocket and gruyere tart, seasonal leaves

Tea-smoked mackerel tart with chive butter sauce

Beef carpaccio, rocket and parmesan, honey mustard dressing

Pan-roasted West Coast hand-dived scallops, cauliflower puree, smoked pancetta, watercress

Pan-roasted snapper, fennel risotto, tomato confit

Pan-roasted sea bass, caper and shallot buerre blanc, celeriac puree

Baked hake, braised leek and pancetta

Classic beef Wellington, red wine sauce, glazed winter greens, fondant potato

Trio of pork: pressed belly, braised cheek, sauteed fillet, butternut puree, braised Savoy cabbage, white port sauce

Pan-roasted loin of venison, wild cranberry and port sauce, sauteed polenta, wild mushrooms, cavelo nero

Roast pheasant, Madeira sauce, wilted spinach, potato rosti, parsnip crisps

ORDERING AND DELIVERY Orders must be received two days before delivery. For certain dishes, delivery can be arranged for the following day. Minimum order is £60, plus a nominal refundable deposit for the servingware and cool bags. Delivery is free within a 15 mile radius of EH3.
